If you don’t have time to cook lunch the night before, take only a few minutes to toss together a simple salad with avocado, mushroom, and beet. It’s still a healthier option that the fried bowl of carbs you’d spend money on the next day!

Ingredients:

  •  1 cup coleslaw mix
  • ¾ cup diced mango (ripe, but not mushy)
  • ½ cup rinsed canned black beans
  • ½ cup mixed nuts
  • 1 tbsp finely chopped red onion
  • 1 tbsp rice vinegar
  • 2 tsp extra-virgin olive oil
  • 8 leaves Boston lettuce

Steps:

  1. Mix all the ingredients together, store in a Tupperware container until the following day.
  2. Grab it in the morning and off to work you go!
